Oat Dry Fruits Ladoo


Hiiii….friends…today I came with one healthy sweet for winter…it’s so yammyyy 😋 …my own creation…we loved this so I want to share my ladoo to all …Hummm here I go !!

: Oat Dry Fruit Ladoo :

Ingredients:

350 -400 gms jaggary + 90 gms regular oat ( roast the oat for five to six minutes on medium flame ,sieve the oat ) + 30 gms roasted sesame + 30 gms unsweetened Shreded coconut + 30 gms cashews + 40 gms raisin + 50-60 gms roasted peanut + 2 tbs ghee and 2 tbs water + 1 tsp cardamom powder.

Methods :

Heat the jaggary powder with ghee and water on medium flame,stirring constantly till jaggary syrup become bubbling and light brown in colour.

Add cardamom powder along with oats and dry fruits, immediately mix well.Let remove from the heat and keep aside for few minutes.

Take some portion of them and shape into ladoo,cool down completely.

Churma Ladoo


Hiii…friends,today I came with Churma  Ladoo..a special delight from Gujarat and Rajesthan ….basically originated from Rajesthan but widely made up Gujaratis especially in festival..any ceremonies…me and my family loved this Ladoo …so here I share my Ladoo to you.

: Churma Ladoo :

Ingredients:

250 gms coarse whole wheat flour for ladoo + 275 gms granulated sugar + 500gms clarified butter ( pure ghee ) + 3/4 cup of cashews powder + 2 -3 tbs roasted coconut powder + 1/2 cup of raisin (optional) + 150 gms khoya + 1 tsp cardamom powder + 1/2 cup of warm milk and 2 tbs pure ghee to knead the dough + oil for deep fry.

Ladoo flour is easily available in Indian market. If you don’t get you can use half quantity of whole wheat flor for chapati and half quantity of semilona.

Method :

Take flour in flat large plate, add warm melted ghee,mix well.Flour must be coated by ghee, now add milk as required to knead the stiff dough.

Shape the portions into your fist and let them deep fry in oil on medium flame till golden brown in colour.

Drain additional oil and allow them the cool down on room temperature.Graind the broken portions in a mixture and make powder called Churma, sieve the Churma powder.

Roast the khoya on medium flame till light brown in colour.

Add sugar, coconut powder, cashews powder, roasted khoya, raisin and cardamom powder in to Churma mixtur. Rubb in between yours palms to mix very well.

Now pour warm and melted ghee over Churma mixtur and shape them round with your palms.

Garnish with fine pistachio powder on top along with cashew  halves…it’s my way to garnishing, you can garnish by your ways but I m very sure to say that fine pistachio powder give delicious…yammyyy looks to Ladoo…

Batata Vada


Hii….friends …..after a long time again I came with nice snack….Batata Vada….it is very famous Indian street food or fast food… most likely coming  from Gujarat and Maharashtra…..so here is my lips smacking receipe of Batata Vada ….

: Batata Vada :

Ingredients :

For tempering : 2 tsp oil + 1/2 tsp mustard + 1/2 tsp cumin + 1/2 tsp fennel + 1.1/2 tsp curry leaf + 2 to 3 chopped green chilli + 1 tsp ginger paste +1 tsp turmeric powder + 1.1/2 tsp chicken masala

5to 6 medium boiled and mashed potatoes

1/2 large lemon juice + 1.1/2 to 2 tbs granulated sugar or as your sweet taste + salt to taste + 2 tbs chopped coriander + raisin and chopped cashew nuts

Method :

Heat the oil for tempering ,add all tempering ingredients ,splutter the mustard – cumin – fennel and saute green chilli with curry leaves,add ginger paste,Saute till raw smell disappear.Add turmeric powder and garam masala.saute for a while.

Add mashed potatoes  with sugar,salt and lemon juice,mix well. Saute for three to four minutes.

Add raisin,cashew nuts and chopped coriander,mix well.Turn off the flame.Keep aside and let it cool completely.

Make a small size of balls as like lemon in shape.

For Batter : 2 to 3 cups of gram flour + 1/2 tsp turmeric powder + 1 tsp red chilli powder + salt to taste +  2 pinch of carom seeds

Collect all together in large bowl,mix well.Add water to make thick flowing batter.

Heat the oil in frying pan on medium flame.Now dip the potato balls in gram flour batter and drop into frying pan. Fry the Batata Vada untill nice crispy golden brown in colour.

Remove from the pan. Serve hot Batata Vada with tomato ketchup,green chutney and fry chillies too….

Cashew Creamy Roasted Red Papers Sauce with Fusilli Pasta


Hii….friends…today after a very long time I came with one delicious pasta food…Cashew Creamy Roasted Red Peppers Sauce with Pasta…rich creamy with tomatoes ,savory- sweet with cashews and roasted red peppers…..magically come out the taste ….

: Creamy Cashew Roasted Red Papers with Fusilli Pasta :

Ingredients  with Method :

1 bowl of whole wheat fusilli pasta= boiled into salted water as in paket direction.Drain the pasta and deep into cold water,again drain the pasta.

2 large size red papers roasted , remove rib and see, chopped.( Bake red papers in preheated oven for 30 minutes on 400F/ 200 C ) + 15 to 16 cashew nuts = blend together to make smooth paste.

2 tbs light bartoli olive oil +3 cloves fine chopped garlic + 1medium size chopped fine onion + 2 medium size peeled ,remove the pulp with seeds ,fine chopped tomatoes + Oregano herbs + parsley + red peparika + salt to taste.

1 cup of vegetables stocks

Heat the olive oil in pan on medium heat, add fine chopped garlic,sauté untill raw smell disappear.Add fine chopped onion  sauté  till become soft and translucent, add fine chopped tomatoes and sauté till oil separate from the border.

Add red papers- cashews sauce and mix well,simmer for two to three minutes.Add herbs ,peparika with salt,mix it and then add vegetables stocks,mix well and simmer for five minutes.

Add boiled pasta,mix well and cook for two minutes.turn off the heat and remove the pan from the heat.

Serve one bowl of meal as yammy……creamyyy… delicious  pasta in front off your lovely people and then see how magic works!!!

Paneer Pasanda


Hii….friends….Happy  Holiiii !!

On this lovely colourfull day I came with my favorite…..Paneer Pasanda…a royal mughlai little sweet dish….Paneer Pasanda is a paneer delicasy that is liked by all…Pasanda means every ones favorite…hummmm…. I loved Pasanda in white gravy as compared to tomato gravy….so here I share my yammy….super yammy….Paneer Pasanda to all my friends…

: Paneer Pasanda :

Ingredients with Method:

Heat 1/2 tsp oil in pan on medium flame,add 15 cashews nut and 2 medium size chopped onion along with 1/2 cup of water.

Let boil for 5 minutes,remove from the heat let it cool down.Take onion and cashews nut into blender to make very fine smooth paste.

Heat 2 tbs clarify butter + 2 tbs oil in pan,add 3 green cardamom + 3 cloves +1 bay leaf + 2 small cinnamon stick,let them roasted.

Add 1 tbs ginger garlic paste with one fine chopped green chilli,sauté until raw smell disappear.Add 1/2 tsp garam masala and 1/2 tsp coriander powder,let them roasted for a minute.

Add chopped 8 to 10 cashews nut ,roasted for a while.

Add onion cashews nut paste in pan and mix well. Cook on law heat until ghee comes on top.Add 4 tbs churn yogurt and 2 pinch of cardamom powder with pinch of nutmeg powder, mix well,cook for two minutes.

Add 1/4 tsp black paper powder,mix well and then add organic honey .

Add paneer cubes,stir in gravy very slowly,just tossed the paneer in gravy and cook for two minutes on law flame.

Garnish with chopped fresh coriander and cashews nuts…and serve with garlic coriander tawa roti as I served to my family….trust me each and every bite was satisfied for yammy and healthy food…

Shahi Paneeer


Hiiii….friends….today I came with Shahi Paneer….a royal dish of Indian cottage cheese…it is one of the most famous paneer preparation….made in rich creamy thick sauce along with cashews nut…yes off course I came with super delicious Shahi Paneer with great twist…and I m sure if you stopped over here for your receipe….it will come out a great treat….even you say never had a taste before….haha….feeling nice…..because it’s great deal with health too…I used zero fat yogurt and almond milk for great creamy sauce inspite of heavy cream…and even honey inspite of sugar…hummmm….good job…..hahaha…so here i go to share my yammy….super delicious Shahi Panner….

: Shahi Paneer :

Ingredients and Method :

200 gms soft cottage cheese,cut into1 inch thick triangle in shape.

Tomato purée : 1 large ripe peeled tomato,remove the pulpe,chopped fine and blend in blender to make a fine smoothy puree.

1/2 cup zero fat beaten plain yogurt.

Almond milk : Soaked and peeled 5 almonds blend with 1/4 cup of milk to make a fine smooth milk without any almond particals.

For thick gravy sauce : 1 medium size chopped onion + 2 large size chopped tomatoes + 15 cashews nut = Heat 1/2 tsp oil in pan,add cashew nuts when it roasted add chopped onion and tomatoes along with 1/2 cup of water,cover the lid and simmer until tomatoes- onion becomes soft.

Take a mixture in blender and blend it to make a very smooth paste without any coarse particals.

Heat the 3 tbs oil in pan,add1 bay leaf ,3 green cardamom.1 small piece cinnamon and 4 cloves,let them roasted for a while on medium flame.

Add 1 tbs ginger garlic paste and sauté till raw smell disappear.

Add 1/2 tsp red chilli powder and stire for a while and then add tomato purée.Mix well and stir until oil becomes separate from  the tomato.

Add thick gravy paste,mix and stir for two to three minutes then add 1/2 tsp coriander powder along with 1/2 tsp garam masala.Saute for two to three minutes.Add beaten yogurt ,mix and stir well.Add almond milk,mix and stir the gravy for a while.

Add 1 tbs organic honey or as you required sweet in your curry. Mix well and then add paneer.

With lots of care and love stir the paneer by soft hand and simmer for two minutes.Turn off the flame and remove the pan from burner.

Garnish with fine chopped cashews along with little sprinkle of garam masala and chopped fresh coriander.

Serve with garma garam tawa roti or fulka roti too….and  become a great meal with dal makkhani….so let you try once …..have a great delicious meal…………thanks…..
