Tawa Bhindi


Hi…friends…today I came with one of my favorite tawa recipe …yesss…its Tawa Bhindi to my style…and my style is I never deep or shallow fry the veggie for tawa recipe…very easy to make and yammy and delicious side dish for fresh garam roti or paratha !! So here I go to share with you guys !!

: Tawa Bhindi :

Ingredients :

300 -350 gms of okra ( clean,dry,cut the upper edge n long slit cut into the center) + 4 tbs oil + 1 tsp red chili powder + 2 tsp coriander powder + 1/4 tsp turmeric powder + 1.1/2 tsp MDH chiken masala + 1 tsp roasted cumin powder + 1/2 -1 tsp dry mango powder + salt to taste + chopped coriander

Method  :

Heat the oil in skillet or wide open pan on medium flame. Add the okra and toss well and toss occasionally,cook untill light brown to burn all sides.

Add all dry powders,toss well to coat the okra very well and cook untill they done nice crispyy n soft . Add chopped coriander.

Hariyali Gobi Masala


Hello to you all on this wonderful day ! I think everyone’s love cauliflower….hummm its little strange if someone don’t like it🤔…so today I’m here for cauliflower lovers who always try to find different taste in cauliflower…in my kitchen cauliflower always comes with tasty..healthy and many different forms like Gobi aloo,Gobi matar,bhuna gobi,hariyali gobi,minty Gobi,Butter gobi…paratha…pakore..lots of thing…hahahaha so friends here I go with one of them…

: Hariyali Gobi Masala :

Ingredients :

1 medium size cauliflower florets boiled in turmeric water for two minutes + 2 cup of roughly chopped fresh fenugreek + 1 bunch of palak ,boiled for five minutes,washed by cold water and make puree by blender.

3 tbs oil + 1/2 tsp coriander seed + 1/2 tsp cumin + 1 tsp ginger garlic

3 large tomatoe puree + 1 tsp red chilli powder +1 tsp coriander powder + 1 /4 tsp turmeric powder + 2 tsp MDH chiken masala + salt to taste

Method :

Heat the oil in the pan ,add cumin and coriander seed ,let saute for a while,add ginger garlic,saute for half minute or till raw smell disappear.

Add fenugreek,mix well and cook for up to five minutes.Add red chilli powder,coriander powder and turmeric powder,mix well,saute for 3-4 minutes.

Add tomatoe puree,mix well,stir and cook for 7-8 minutes or untill gravy separate from the surface bottom just below the second image. Add boiled cauliflower florets,mix them slowly with care and cook for a minute.

Add palak puree,mix well and cook for up to five minutes on law to medium heat without much stir or just toss the handle of the pan slowly slowly.

Turn off the flame and transfer into bowl,sprinkle pinch of garma masala and crushed coriander seed.

Serve with garma garam roti…or naan….totally ups to your mind!🤗

Pumpkin Vadi / Spicy Pumpkin square


Hiii…friends…today I came with my own creation receipe…Pumpkin Vadi…Such a very delicious snack with soft inside and crispier out side…my family loved this Vadi so much…so here I’m very happy to share my new receipe to all friends and  I’m sure if you’ll try once your family become very happy and satisfied with new taste..

: Pumpkin Vadi :

Ingredients  and Method:

2 cup of gram flour + 2tbs rice flour + 1/2 tsp turmeric powder + 2 tsp coriander powder + 2 tsp garma masala = mix well.

Add grated yellow pumpkin,mix well.

Add 2 tsp roasted sesame + 2 tbs roasted crush peanuts + 1 tbs ginger garlic green chilli paste = mix well.

Add 2 tbs sugar + 2 tbs yogart + 1/2 lemon juice + 1 cup of fresh coriander + 1 tsp dry fenugreek leaf + 1/2 cup to 3/4 cup of water + 1/4 tsp baking soda and salt to taste = mix well to make semithick batter as in image.

Pour the batter in oil greased plate for steamer and steam it for 20 minutes in already hot steamer.Remove the plate ,let it cool down and cut into squares in shape.

Heat the oil on medium flame and let them shallow fry,drain the extra oil.

Serve garma garma pumkin square with tomato ketchup or green Sauce…such a mind blowing taste !!

 

 

Kothimbir Vadi


Hiii…friends….today I came with very interesting snacks….Kothimbir Vadi is a crispyy fritter made from coriander leaves and chickpea flour..its a favorite Maharashtrian snack which is serve as side dish and even also a perfect teatime snacks with spicy green sauce..

: Kothimbir Vadi :

Ingredients with Methods :

2 cups of gram flour + 2 tbs rice flour +  1/2 tsp turmeric powder + 2 tsp coriander powder + 2 tsp garam masala = mix well.

Add 2 cup of chopped fresh coriander + 2 tsp roasted sesame + 1.1/2 tbs ginger- garlic-green chilli paste + 2 tbs roasted crush peanut + 2 tbs yogart + 2 tbs sugar +  1/2 large lemon juice  + salt to taste = mix well to each other.

Add 1 tbs fennel + 1/2 tsp baking powder with 1/2 to 1 cup of water to make thick batter as in image.

Pour batter in greased plate and steam on high for twenty minutes. Remove from the steamer and cool completely.Cut into mini squares or diamond shape as I have.

Heat the oil in deep frying pan and fry 2 to 3 pieces in single till vadies become nice crispy  light golden brown in colour.

Serve garma garam Kothimbir Vadi with spicy zunzuny green sauce…such a very delicious …crispyy…and soft….Vadi never I had before…mouthmelting snack…😀

 

 

 

Microwave Garlicy Dill Potatoes


Hiii…..friends…. I like crispyy potatoes in any style….today again I came with microwave style potatoes…this one is special for those who like fresh dill….yes trust me very tastyyyy  …..very spicyyy….amazing with tomato ketchup as snacks or as side dish with any curry….

: Microwave Garlicy Dill Potatoes:

Ingredients with Methods:

5 medium size peeled and cut into small cubes + 1 tsp red chilli powder + 1.1/2 tsp chicken garam masala + 1/4 tsp turmeric powder + 1 tsp cumin seeds + 4 to 5 crush garlic +1 cup of chopped fresh dill + 2 tbs extra virgin oil + salt to taste = mix all together in large bowl.

Transverse potatoes into microwave proof plate and spread evenly.

Microwave them on high ( full power ) for 12 to 15 minutes and flip them to again microwave for 12 to 15 minutes.

Serve as side dish with any curry or serve as snack with tomato ketchup……yammyyy going as snack…..

Ambode /Masala Vada


Hiiii….friends…today again I came with my all time favorite fritter snack…hummm…Ambode – Masala Vada is one of the most popular main side dish in Karnataka….mainly it is very famous in Banglore and Mysore…prepared during any festival..it can be enjoyed at anytime of course as teatime snacks or as appetizer too…I do prepare this very often….very tasty and easy to make…even healthy too….

: Ambode / Masala Vada :

Ingredients  and Method :

1 cup of soaked and drained Chana dal + small piece of ginger + 1 large green chilli + 3 to 4 cloves garlic(optional ) = coarse to paste in mixer blender.

Add 1/2 bunch of chopped fresh dill + 2 tbs fine rice flour in dal paste = mix well.

Add 1 tsp red chilli powder + 1.1/2tsp garam masala + 1/4 tsp turmeric powder + 1/2 tsp fennel + 1/2 tsp cumin seeds + 1/4 tsp chat masala + salt to taste = mix well.

Add pinch ok baking soda ,mix well and keep aside for five minutes.

Heat the oil in deep frying pan on medium flame. Take a lime sized balls of the mixture and pat them onto greased oil of fingers and give flat shape.I give little flat spoon heap shape with the help of two spoons.

Drop 5 to 6 spoon heap at once time into pan and fry to both sides till nice crispy golden brown in colour.Remove from the pan and sprinkle chat masala.

Serve garma garam Ambode with Hot and Sweet Tomato ketchup and off course one cup of masala tea….

Batata Vada


Hii….friends …..after a long time again I came with nice snack….Batata Vada….it is very famous Indian street food or fast food… most likely coming  from Gujarat and Maharashtra…..so here is my lips smacking receipe of Batata Vada ….

: Batata Vada :

Ingredients :

For tempering : 2 tsp oil + 1/2 tsp mustard + 1/2 tsp cumin + 1/2 tsp fennel + 1.1/2 tsp curry leaf + 2 to 3 chopped green chilli + 1 tsp ginger paste +1 tsp turmeric powder + 1.1/2 tsp chicken masala

5to 6 medium boiled and mashed potatoes

1/2 large lemon juice + 1.1/2 to 2 tbs granulated sugar or as your sweet taste + salt to taste + 2 tbs chopped coriander + raisin and chopped cashew nuts

Method :

Heat the oil for tempering ,add all tempering ingredients ,splutter the mustard – cumin – fennel and saute green chilli with curry leaves,add ginger paste,Saute till raw smell disappear.Add turmeric powder and garam masala.saute for a while.

Add mashed potatoes  with sugar,salt and lemon juice,mix well. Saute for three to four minutes.

Add raisin,cashew nuts and chopped coriander,mix well.Turn off the flame.Keep aside and let it cool completely.

Make a small size of balls as like lemon in shape.

For Batter : 2 to 3 cups of gram flour + 1/2 tsp turmeric powder + 1 tsp red chilli powder + salt to taste +  2 pinch of carom seeds

Collect all together in large bowl,mix well.Add water to make thick flowing batter.

Heat the oil in frying pan on medium flame.Now dip the potato balls in gram flour batter and drop into frying pan. Fry the Batata Vada untill nice crispy golden brown in colour.

Remove from the pan. Serve hot Batata Vada with tomato ketchup,green chutney and fry chillies too….

Methi Oat Muthiya


Hiii…friends…again I came with my Muthiyas variation…..yah…healthy…tasteyy…yammy…one more Muthiya…that is Oats with Methi Muthiya…

: Methi Oat Muthiya :

Ingredients with Method :

150 gms oatmeal,quick oat + 2 cups of fresh fenugreek + 3 tbs cram flour + 3tbs semilona (45gms)+ 1.1/2 tbs green chilli – ginger – garlic paste take in large bowl,mix well.

Add chopped fresh fenugreek + 1/2 tbs chopped coriander + 3 tbs yogart + 1.1/2 tbs garam masala + 1/2 tsp cumin seeds + 1/2 tsp fennel + pinch of carom seeds + 2 tbs granulated sugar,mix well.

Add 1/2 lemon juice + 1 tbs oil + 1/4 tbs baking soda with salt to taste,mix well and kned the soft dough for muthiyas..

Take 1.1/2 glass of water into steamer and heat on medium flame.

Divide the dough into three portion to make long cylindrical logs.

Arrange into greased steam tray and steam for 10  to 12 minutes. ( keep into steamer when to see steam comes out )

Remove from the steamer,let’s warm the logs and cut into round shape as in image thickness.

Heat the 3 to 4 tbs oil in deep frying pan,let’s crackle the mustard seeds on medium heat and then add sesame.Add the steamed muthiyas into the tempering with chopped coriander along with pinch of salt,sugar.lemon juice,Saute till Muthiya becomes nice crispy light brown in colour.

Serve with fry green chilli and mint sauce…

I’ll be come once more time with new variation of muthiyas…till then try and enjoy this yammy …healthy…Muthiya…

 

Methi Thepla


Hiiii….friends….after weekend I came with spicy Indian flat bread…most probably it is Gujarati receipe….even in winter it comes to every home by ownself with lots of aroma…..made with whole wheat flour and fresh fenugreek leaf along with lots aroma of spices….very light and very healthy snacks …or healthy breakfast too …it loves by my all family at any time…so here I share my yammy and healthy receipe

: Gujarati Methi Thepla :

Ingredients with Method :

2 cups of whole wheat flour + 2/3 cup of fresh small leaves of fenugreek + 1 tsp red chilli powder + 1.1/2 t coriander powder + 1/2 tsp turmeric powder + 1 tsp garam masala = mix well.

I always try to make it with small leaves of fenugreek so not need to chopped it. Even I recommend for small leaves for yammy taste of thepla, and if you don’t have then you just broke roughly by hand because if you chopped fine then it’s going bitter on taste …

Add 1 tbs ginger – garlic – green chilli-cumin seeds paste + 2 tbs lemon juice ( I large lemon )+ 2 tbs plain yogurt + 2 tbs oil  + 2 tbs sugar powder + salt to taste = mix well together.

Add  water little by little to kned the semithick consistency of dough foe Thepla.

Divide the dough int  12equal size of the ball.Take one ball and roll it out on rolling bread board into circle having approximately 6 to 7 diameter just like roti or paratha.

Transverse the Thepla on hot tawa over mediu flame.when tiny bubbles start to rise on top surface,flip it over, spread 1/2 tsp oil evenly oil over the surface and cook for 1/2 minute.

Again flip,spread 1/2 tsp oil evenly on surface and cook untill nice crispy Thepla is come ou from other side .By that way cook the Thepla from both side till become  nice crispy Thepla comes out with the help of spatula.

Remove from the tawa and apply a clarified butter on top.

Serve with sweet mango pickle and spicy yogurt for healthy breakfast or even one cup of tea it’s going yammy snack too….

Lauki Palak Muthiya


Hii….friends…steam food….yesss…in steam food  my family like Muthiya and Dhokla very much…so frequently I make in variation…so today I serve you Lauki Palak Muthiya….very soft…crispy..and tangy in taste..so here I go…

: Lauki Palak Muthiya :

Ingredients with Method :

1 large grated and squeeze Lauki + 3 bowl of chopped spinach + 1 cup of whole wheat flour + 1/2 cup of semilona + 1/2 cup of gram flour  + 1 tsp red chilli powder + 1.1/2 tsp garam masala + 1/2 tsp turmeric powder+ 1 tsp cumin seeds + 1 tsp fennel seeds + 1/4 tsp carom seeds + 2 tbs granulated sugar = mix well.

Add 1 tbs ginger- garlic – green chilli paste + 3 tbs yogurt +1/2 lemon juice + 2 tbs oil along with salt = mix well.

Add 1/4 tsp baking soda in dough and mix well. Set aside for five minutes.

Add 1.1/2 glass of water into steamer and heat on medium flame.

Apply oil on both palms ,divide the dough in equal 5 to 6 portion and to make large cylindrical shape like log.Arrange the all log in greased plate and steam for 15 to 20 minutes.

Remove from the steamer, let them cool and cut into 1.1/2 inch thick slices.

Heat the 3 tbs oil in pan ,add mustard when crakled add sesame seeds on medium flame.Add Muthiya slices ,sauté untill muthiyas crispy and then sprinkle chopped coriander with lemon juice ,sugar and little salt.

With a great going with tea as a snack….very tastyyyy….crispyy…and tangy Muthiya….
